- 2 tbsp granulated sugar
- 1 tsp baking powder
- 1 tsp baking soda
- 0.25 tsp salt
- 0.75 cup whole milk
- 1 piece large egg
- 1 tsp vanilla extract
- 5 tbsp cookie butter
- 2 tbsp unsalted butter, melted
- 1 tbsp vegetable oil (for greasing pan)

In a medium bowl, whisk together the all-purpose flour, cornstarch, granulated sugar, baking powder, baking soda, and salt until well combined.

In a separate bowl or large measuring cup, whisk together the whole milk, large egg, vanilla extract, and melted unsalted butter.

Pour the wet ingredients into the dry ingredients and mix until just combined and no streaks of flour remain. Do not overmix.

Let the batter rest for 10 minutes at room temperature to allow the gluten to relax for a more tender waffle.

Preheat a taiyaki pan over medium heat. Once hot, lightly grease both sides of the pan with vegetable oil using a pastry brush or paper towel.

Add 1 heaping tablespoon of cookie butter to the center (the 'belly' of the fish) of each taiyaki mold.
