    Ingredients

    • 2 cups Japanese ten-grain mix (zakkoku-mai)
    • 3 cups water
    • 1 piece kombu (kelp), 5cm square
    • 150 g firm tofu, cubed
    • 1 piece onion, thinly sliced
    • 1 cup shiitake mushrooms, sliced
    • 1 cup carrot, julienned
    • 1 cup baby spinach
    • 1 cup broccoli florets
    • 2 tbsp white miso paste
    • 2 tbsp soy sauce
    • 2 tsp sesame oil
    • 2 tbsp white sesame seeds
    • 2 piece green onions, finely sliced

    Instructions

      Rinse the ten-grain mix under cold water until the water runs clear. Drain well.

      Combine the rinsed grains, water, and kombu in a medium saucepan. Let soak for 15 minutes.

      Bring to a boil over medium-high heat. Once boiling, reduce to low, cover, and simmer for 20 minutes until grains are tender. Remove kombu.

      While the rice cooks, heat sesame oil in a large skillet over medium heat. Add onions and sauté for 2 minutes until translucent.

      Add mushrooms, carrots, and broccoli. Stir-fry for 5 minutes until vegetables are just tender.

      Add tofu cubes and spinach to the skillet. Pour in soy sauce, toss gently, and cook for 2 more minutes.

      In a small bowl, mix miso paste with a few tablespoons of hot water until smooth. Stir into the cooked grains.

      Divide the ten-grain rice among four bowls. Top with sautéed vegetables and tofu.

      Sprinkle each bowl with sesame seeds and sliced green onion.

      Serve hot, optionally with a side of pickled plum (umeboshi) or nori strips for added flavor.
