- 2 pieces large ripe bananas, mashed
- 4 pieces large eggs
- 0.50 cup vanilla protein powder
- 0.25 cup plain Greek yogurt
- 1 tsp pure vanilla extract
- 0.50 tsp ground cinnamon
- 0.25 tsp baking powder
- 0.25 tsp salt
- 1 tbsp olive oil, for cooking
- 0.25 cup fresh berries, for serving
- 2 tbsp maple syrup, for serving

In a large mixing bowl, mash the ripe bananas with a fork until mostly smooth.

Add the eggs, vanilla extract, and Greek yogurt to the mashed bananas. Whisk until well combined.

Stir in the protein powder, cinnamon, baking powder, and salt. Mix until a smooth batter forms.

Heat a nonstick skillet over medium heat and add half the olive oil, swirling to coat the pan.

Pour about 2-3 tablespoons of batter per pancake onto the skillet. Cook for 1-2 minutes, until bubbles form on the surface and the edges look set.

Carefully flip each pancake with a spatula and cook for another 30-60 seconds, until golden and cooked through.
