
Cajun Grilled Chicken with Lime Black-Eyed Bean Salad

Ingredients
- 4 pieces skinless, boneless chicken breasts
- 1 tbsp rapeseed oil
- 1 clove garlic, finely chopped
- 1 tsp smoked paprika
- 0.50 tsp dried thyme
- 0.50 tsp dried oregano
- 0.25 tsp cayenne pepper or chili powder, to taste
- 200 g black-eyed beans, drained and rinsed
- 2 pieces medium tomatoes, diced
- 85 g sweet corn, drained
- 2 pieces scallions, finely sliced
- 25 g sun-dried tomatoes in oil, chopped
- 1 piece lime, zest and juice
- 0.50 cup fresh coriander, chopped
- to taste salt and black pepper

In a small bowl, mix rapeseed oil, chopped garlic, smoked paprika, dried thyme, dried oregano, and cayenne pepper.

Place chicken breasts in a large sealable bag or shallow dish. Add the spice mixture and rub to coat evenly. Flatten chicken slightly with a rolling pin for even cooking.

Let the chicken marinate for at least 15 minutes while you prepare the salad.

In a large bowl, combine black-eyed beans, diced tomatoes, sweet corn, sliced scallions, chopped sun-dried tomatoes, lime zest and juice, and chopped coriander.

Season the bean salad with salt and black pepper to taste. Mix well and set aside.

Preheat a grill or grill pan to medium-high heat. Line with foil if desired.

Grill chicken breasts for 5 minutes on one side until golden brown. Flip and grill for another 5–7 minutes, or until cooked through and juices run clear.
