    Ingredients

    • 1 lb lean ground beef (93% lean)
    • 1 tbsp olive oil
    • 1 tsp garlic powder
    • 0.50 tsp onion powder
    • 1 tsp smoked paprika
    • 0.75 tsp black pepper
    • 0.50 tsp salt
    • 1 tbsp Worcestershire sauce
    • 2 tsp yellow mustard
    • 6 cups mixed leafy greens (spring mix or romaine)
    • 1 piece medium red onion, thinly sliced
    • 1 cup cherry tomatoes, halved
    • 0.50 cup dill pickle slices
    • 0.25 cup bacon bits
    • 1 cup reduced-fat shredded cheddar cheese
    • 0.50 cup plain nonfat Greek yogurt
    • 1 tbsp ketchup
    • 1 tbsp yellow mustard (for sauce)
    • 1 tsp apple cider vinegar

    Instructions

    1. 1

Heat a large skillet over medium heat and add olive oil.

    2. 2

Add lean ground beef to the skillet and break it up with a spatula.

    3. 3

Season the beef with garlic powder, onion powder, smoked paprika, black pepper, salt, Worcestershire sauce, and yellow mustard.

    4. 4

Cook the beef, stirring frequently, until browned and cooked through, about 5-8 minutes.

    5. 5

While the beef cooks, prepare the burger sauce: In a small bowl, mix Greek yogurt, ketchup, yellow mustard, and apple cider vinegar until smooth.

    6. 6

Divide mixed leafy greens among 4 serving bowls.

    7. 7

Top each bowl with sliced red onion, cherry tomatoes, dill pickle slices, and bacon bits.

    8. 8

Spoon the cooked beef mixture evenly over the vegetables in each bowl.

    9. 9

Sprinkle shredded cheddar cheese over each bowl.

    10. 10

Drizzle the prepared Greek yogurt burger sauce over each bowl.

    11. 11

Serve immediately while warm. Optionally, add baked sweet potato fries or cooked quinoa on the side for extra carbs.
